Everyone in Galway knows everyone else in Galway. The county may be big – the second-largest in Ireland – but the city is small, as if the 14 families who controlled it in the Middle Ages were still in charge of their various stomping grounds.
Rubbing shoulders with one another means an awareness of what everyone else is up to, what standards they are setting, what new plans they are hatching. Galway food people look over their shoulders, and the result is the healthiest food ecosystem in Ireland, one built on continuous improvement, as both Dela and The King’s Head reveal.
